Glutinous Rice

Hi Ya People! My cooking mood is BACK!!

This morning, I prepared all the ingredients for Glutinous rice.

Ingredients:

300g Glutinous rice, soaked overnight
1/2 cup dried shrimps
2 Chinese Sausages
3 Chinese Mushroom
4 Shallots, finely chopped
2 cloves garlic
375mk chicken broth

Directions:
1. Wash soaked rice and drain
2. Soaked Mushroom for 20 mins and drain, diced.
3. Soaked dried shrimps.
4. Sliced Chinese sausages
5. Heat oil and fried shallots, garlic
6. Add shrimps, mushroom and sausages and stir fried for 3 mins
7. Put in rice. Turn and mix well
8. Add black soy sauce, salt, pepper to taste.
9. Add broth, lower heat and cooked till all broth is absorbed.
10. Remove rice and place in big bowl or rice cooker.
11. Place on a steamer and steam for 30 mins. (I used the Toshiba "wang neng guo" rice cooker, which allows me to steam as well haha)
12. Sprinkle fried shallots and peanuts when ready.

TADAH!!!! My first attempt! I think the rice is not sticky enough, more like claypot rice HAHAHA but mum loves it!

Yesterday's dinner was Rendang Chicken with Couscous

I bought Naan as well to eat it with the Rendang Sauce. Yum yum!

Ingredients:
1 pack Rendang kit (comes with the sauce and coconut milk)
800g of chicken (bought the wings and drumlets)
1 pack of Couscous
675ml of chicken broth
1 medium size onion (diced)

Salt and sugar to taste.

Directions:
1. Add onion to oil and stir till browned.
2. Add in Rendang paste and stir till frangrant.
3. Add chicken and mix well (make sure it is coated evenly with the sauce)
4. Pour in coconut milk and let it simmer for 20 mins, stirring occasionally to prevent burnt.

Couscous- just follow the box instruction. I added some butter and turmeric powder to taste.

ps: Personally, I don't like the taste of couscous. Very floury. I think the Rendang is delicious!! Eat it with Plain white rice or Biryani rice will be an excellent choice!
